Try something delicate like salmon or tuna.
Try a "Four Horsemen" type of challenge burger. Marinade a burger in something slightly sweet and savory (Jack, flavored rum, whatever). Do it "juicy lucy" style with Habanero Jack cheese (its hard to find, but it's out there), and then do a dry-rub coat of Habanero Death Dust before grilling. Then top with a salsa made from habaneros, or if you're realllllly brave, Naga Jolokias.
